Hands-on Recipes: CCS Royal Icing and Hand Whipped Royal Icing. Beginner's Decorating techniques on piping using pressure and time clocks. Detail on borders, flaura, embroidery, stringworks and cake frosting. Final project includes personal design and
application of all decorating techniques on 4 celebration cakes.

Ms. Tess and Ms. Josie are in house CCS instructors. Both have trained under CCS in the 80's. Ms. Tess has been in the pharmaceutical business for 20 years and currently the international training consultant Natural Life Asia (Seoul, S. Kirea). Ms.
Josie has been on staff at CCS for 20 years. She is the executive assistant of Mrs. Avelina Carbungco Florendo. Ms Josie is certified in food preparation and food safety.

Avelina owns CCS Bakeshop and Cake Decorating school at 91 - 8th Avenue Cubao, Quezon City, where she teaches with her daughter in law Ma-ai Florendo, and grandson - Emmanuel "Flo" Florendo. Here she shares the techniques she learned from the seminars and classes she attends in different countries like England, Canada, Australia, Italy, France , US and many others. Almost all the teachers, bakers, cake decorators and baking enthusiasts in the country has been her student. She has been teaching cake decorating and other sugarcrafts for the past 40 years and has authored 4 books in cake decorating, the first cake decorating series published in the Philippines.
Her foreign students come from Indonesia, Singapore, Malaysia, Taiwan, Thailand, Africa, Guam, Brunei, Japan, USA, Canada, Australia and many more.
