MODULE DESCRIPTION

This course is designed for potential entrepreneurs or business owners who have the interest in moving into the dynamic world of hospitality via the restaurant industry. It aims to provide students with fundamental business knowledge and skills focused on hospitality marketing, accounting, human resources, sustainable development, IT, legal aspects, and food and beverage management.

All topics within the course shall be delivered within the context of the different types of restaurant businesses. This course is also intended to provide those having completed the advanced pastry or advanced culinary arts course with the necessary restaurant business acumen to start and manage their own restaurant business.

LEARNING OBJECTIVES

By the end of the Module, participants will be able to:

  • Identify and understand the concepts of entrepreneurship, business, the hospitality industry, and the restaurant business
  • Describe the basics of business management and entrepreneurship
  • Explain the dynamics of the restaurant industry and the processes involved in doing business within the industry

  • Demonstrate the required skillset for putting up and managing a restaurant business

  • Demonstrate freedom of fear of failure
  • Follow the pursuit of opportunity without regard to the resources currently controlled
  • Have an open, service-minded attitude toward guests and colleagues by focusing on quality of work and quality of results
