This intensive culinary arts course is dedicated to those interested in developing their professional careers in the culinary world.
Participants will gain the fundamental knowledge of all the basic techniques of classical French cuisine and pastry production, as well as develop the essential skills that will enable them to explore the subtleties of contemporary cuisine. Among the learnings acquired in this course, the preparation of authentic French, Mediterranean, and Thai cuisine form part of its core activities. In addition, the basics of catering and banquet food production are also included in this module.
LEARNING OBJECTIVESBy the end of the Module, participants will be able to:
Knowledge- Identify basic techniques in culinary and pastry arts and catering and banquets
- Describe the differences between French, Mediterranean, and Thai cuisine among many others
- Demonstrate the basic skills and techniques in culinary and pastry arts.
- Demonstrate skills in catering and banquet production
- Present techniques in the preparation of authentic French, Mediterranean, or Thai cuisine
- Have an open, service-minded attitude toward guests, colleagues and superiors by focusing on quality of work and quality of results
- Be aware of his/her responsibility to contribute to effective communication, coordination and interaction amongst food preparation staff and restaurant service staff.
